Dhokla - Gujarati Snack Recipe by Ruchi Bharani - Vegetarian br Ingredients: br 1 cup Urad Dal or White Lentils br 2 cups Rice br 12 tsp Soda bi-carbonate br 1 tsp Ginger Chilli paste br 1 tbsp Methi dana or Fenugreek Seeds br 12 Lemon br Pepper br Ghee or Clarified butter br Salt to taste br br Method: br For Dhokla batter: br -Soak Urad Dal and Rice, separately, for 8 hrs. br -Grind the Urad Dal into a fine paste br -Grind the Rice into a coarse paste. br -Mix the ground urad dal and rice paste together. Add Methi or fenugreek seeds and let it ferment for a good 8hrs. br br For making Dhokla: br -Grease an 8-9inches thali or plate (as shown in the video) br -Take a big, slightly deep vessel, fill it with water, place a steel ring or stand in it. Cover with a lid or a plate and let the water come to a complete boil. You can also use a steamer if you have one. br -Take the fermented batter give it a stir and if you feel it is too thick you can add WARM water (do not use cold water) to get a nice pouring consistency. br -Add ginger chilli paste and salt to the batter and mix well. br -Since the batter is enough for two rounds, you an split the batter into two. br -Keep your thali or plate kept ready in the steamer. br -Add a few drops of lemon to the first batch and without stirring add 14 tsp of baking soda on the lemon juice. Give it a quick stir. br -Quickly pour the batter into the plate or thali. br -Sprinkle some ground black pepper and cover it. br -Let it steam for 10-15 mins on a full flame. br -After 15 mins check on the dhokla. once they are ready apply a little bit of ghee on the top. br -Remove from flame and let it cool. br -Cut the dhokla into small squares, separate them.
