Punjabi Kadhi Pakoda - Traditional Punjabi Maincourse Recipe By Ruchi Bharani

A steaming hot kadhi with crispy flavorsome pakoda is an authentic Punjabi recipe. Check out chef Ruchi Bharani's take on this signature Punjabi dish. br br Ingredients: br 1 Cup Gram Flour br 4 onions, finely chopped br Coriander Leaves br 12 tsp Carom seeds br 1 tsp Fennel seeds br 12 tbsp coriander-cumin powder br 1 tsp red chilli powder br 1 tbsp curd br 100 ml curd br 12 tbsp coriander cumin seed powder br 12 tbsp red chilli powder br 12 tbsp gram flour br 1 tbsp ghee br 1 tbsp ginger-garlic paste br 12 tsp ghee br 12 tsp carom seeds br 12 tsp fennel seeds br 1 dry red chilli br br Method: br br To make the batter: br - In a bowl, add the gram flour, finely chopped onions, coriander leaves, carom seeds (ajwain), souf (fennil seeds), coriander & cumin seed powder, red chilli powder,curd and water and mix well. br - Add a pinch of the soda bicarbonate to the above ingredients and mix well using hands. br - Apply little oil onto your hands and make round balls from the batter. br - Let the pakodas fry in hot oil. br - Once done, remove the pakodas out on an absorbent paper. br br To make the kadhi: br - In a bowl, add the yogurt, coriander & cumin seed powder, red chilli powder, salt to taste and gram flour and whisk all the ingredients well. br - While whisking, add the water. The kadhi mix is ready. br - In a saucepan, heat some ghee, br - Add the finely chopped onion to the oil. Cook them until they are slightly translucent. br - Add the ginger and garlic paste and saute well. br - Pour the kadhi mix in the saucepan and stir. br - Let the kadhi boil for about 5-6 minutes. br - Once the kadhi is boiled, put it off the flame. br - In a small vessel, add little ghee, ajwain, sounf and a dry red chilli (in 2 pieces).
