Sausage and Peppers One-Pot Recipe - Le Gourmet TV

This simple tasty one pot meal will surely be a hit with your family. br br SERVES: 4 - 6 br Ingredients: br 1 pound (500g) Italian sausage br 2 Tbsp (30 mL) extra-virgin olive oil br 3 assorted bell peppers thinly sliced br 1 bulb fennel trimmed and sliced br 1 large onion, sliced br coarse salt br 3 cloves garlic, minced br 1 tsp (5 mL) chopped fresh rosemary br ½ tsp (2 ml) red pepper flakes br ½ tsp (2 mL) fennel seeds (optional) br 1 I5-ounce (398 mL) can diced tomatoes br ½ cup (125 mL) red wine br br Method: br Preheat the broiler. Poke holes in the sausages and arrange on a baking sheet; broil until golden brown - about 8 minutes, turning halfway through. Then cut in half. br Meanwhile, heat olive oil in a large skillet over medium-high heat, toss in the bell peppers, fennel and onion; cook & stir until they soften slightly - about 3 minutes. br Add salt, garlic, rosemary, red pepper flakes and fennel seeds Cook, stirring, 1 more minute. br Stir in ½ cup red wine, and the tomatoes; reduce heat to medium, cover and cook until the vegetables are tender- about 5 minutes.
