Dhansak - Easy To Make Homemade Parsi Maincourse Recipe By Ruchi Bharani

Share on Facebook - br Tweet about this - br Share on g+ - br br Chef Ruchi Bharani brings to your table a delectable dish from the Parsi cuisine called Dhansak. Dhansak is a combination of Persian and the Gujarati cuisine. It is usually made by cooking mutton with lentils and vegetables but here, Ruchi is up with the vegetarian version of Dhansak. br br Ingredients: br br 1 cup tuvar dal br 2 tbsp masur dal br 2 tbsp chana dal br 2 brinjals br 100g pumpkin br 1 cup fenugreek leaves br 3 potatoes br 2 onions br 7-8 cloves garlic br 2 inch piece ginger br 2 chillies br 1 tsp garam masala br 12 tsp red chilli powder br 12 tsp turmeric powder br 1 tbsp coriander cumin seed powder br 1 tsp cumin seeds br Brown Rice- br 1 tbsp ghee br 1 tsp cumin seeds or jeera br 12 cup rice br Salt to taste br 1 12 cups of water br br Method: br br To make the tempering: br - Heat oil in a pan. br - Once the oil is hot, add the cumin seeds, br - Ground ginger, chilli and garlic into a coarse paste and add it to the oil. br - Saute the ingredients well. br - Add the chopped onions and cook them until they are brown. br - Add the chopped tomatoes and saute well. br - Add turmeric powder, coriander and cumin seed powder, red chilli powder, salt and the dhansak masala and mix well. br - The masala mix is ready. br br To make dhansak: br - In a pressure cooker, add the pigeon peas (toor dal), gram dal (chana dal), masoor dal, chopped pumpkin, half chopped aubergine (baingan), big pieces of potatoes, chopped fenugreek leaves, salt, turmeric powder and water. Cover the pressure cooker with a lid and give it atleast 4 - 5 whistles. br - Once done, let it cool down slightly. br - Open the lid of the cooker and stir the ingredients well. br - Take out a few potato pieces from the mix and keep them aside. br - Add the masala mix to the dals in the pressure cooker. br - Using a blender, blend all the ingredients well. br - Add little water to get a dal consistency. br - Chop the potatoes roughly (ones kept aside earlier) and add them to the dhansak. Mix well. br - Since we've added water, let us boil the dhansak. Cook it until it comes to a boil. br - The dhansak is ready. br br To make rice: br - Heat oil in a pan. Add sugar to it and let it melt. Make sure that you do not stir until it melts. br - Once the sugar melts, add the rice to it.
