Spring Tiramisu

Make some delicious easter-themed tiramisu with this SheKnows food how-to!br br br br br Ingredients:br 8 ounces Italian mascarpone cheesebr Pre-made Angel Food Cakebr 2 small egg yolksbr 2 tablespoons sugarbr 2 ounces espresso or extra strong coffee, cooledbr 1-12 tablespoons dark rum or brandybr 2 tablespoons unsweetened cocoabr Chocolate Candiesbr Chocolate shavings for garnish (optional)br br br Directions:br 1. Take a pre-baked angle food cake and cut it in to ½ inch slicesbr 2. Cut the cake into the circle to fit the moldbr 3. In a bowl, whisk egg yolks, sugar and half of the brandy. Whip the mixture fast to thickenbr 4. Fold in the mascarpone spoon by spoon. The mixture should be nice and thick. If it isn't thick and comes out runny, use a hand blender with whipping blades and blend until thickbr 5. Mix espresso and the rest of the brandy on a small platebr 6. Brush each side of the angel food cut out with the mixture (do not soak) and add a layer to the bottom of your serving dishbr 7. Top the cake with chocolate candies and pipe in cheese mixture to top of the chocolate candies; then repeat and top with the rest of mascarponebr 8. Cover the tiramisu and rest in the fridge for four hours br 9.
