Warqa or warka is similar to the Greek Filo pastry and is the paper thin pastry used to make the Moroccan pastilla and briouates briwats. It is similar to puff pastry once cooked. In Marrakech, rather than buy it in a packet from the supermarket, you can buy it freshly made from the marché couvert in the Mellah.
