Learn how to make various types of Chutney recipes from our chef Archana on Ruchkar Mejwani, that are popularly used in Chaat items like Sev Puri, Pani Puri, Bhel, Ragda Patties. br br Ingredients: br br For Date & Tamarind Chutney (Sweet Chutney): br 250 gms Dates (Khajur) br 100 gms Tamarind (Imli) br 12 tsp Cumin Seed Powder br 12 tsp Coriander Seed Powder br 12 tsp Red Chilli Powder br Salt to taste br Water br br For Green Chutney (Medium Spicy Chutney): br 1 Cup Coriander Leaves br 12 Cup Mint Leaves br 2 tbsp Chana br 2-3 Green Chillies br 12 Lemon Juice br 4-5 Garlic br 12 inch Ginger br Salt to taste br Water br br For Red Chilli Garlic Chutney (Spicy): br 15-20 Dry Red Chillies br 10-12 Garlic br 12 inch Ginger br 12 tsp Cumin Seeds Powder br 12 Lemon juice br Salt to taste br Water br br Method: br br To Make Date & Tamarind Chutney br - Firstly soak the dates & tamarind in water for 1 hour. br - In a mixer grinder add dates, tamarind, cumin seeds powder, coriander seeds powder, red chilli powder & salt. Grind everything to a smooth paste. br - Pass the mixture through a strainer by adding little water. br - Date & Tamarind Chutney is ready. br br To Make Green Chutney br - In a mixer grinder add coriander leaves, mint leaves, chana, green chillies, lemon juice, garlic, ginger, salt & water. br - Grind everything to a smooth paste. br - Green Chutney is ready. br br To Make Red Chilli Garlic Chutney br - Soak the dry red chillies in water for some time. br - In a mixer grinder add soaked dry red chillies, garlic, ginger, cumin seeds powder, lemon juice 7 salt. br - Grind everything to a smooth paste. br - Red Chilli Garlic Chutney is ready.
