Crack 2 eggs and whisk together until thoroughly blended. br 2. Pre-heat a nonstick skillet over medium heat and add butter, once melted, add the egg mixture and cook for 3-4 minutes. br 3. Continue shaping the omelette with your spatula. br 4. Add the cheddar cheese and chopped chives to one side of the omelette, then gently fold the empty half over.
