It is prepared by soaking vadas in thick dahi.So here is the step by step demonstration of the recipe with The Bombay Chef Varun Inamdar only on Rajshri Food. br br Ingredients br Dahi wada ( serves 20 pieces) br br 1 cup urad dal br 1 green chili, chopped br ½ inch ginger, chopped br 1 tsp cumin seeds (jeera) br a pinch of asafoetida (hing) br 3 tbsp water for grinding the batter or as required br salt as required br 2 tbsp hot oil br br Topping br 3 cups curdyogurt br 1 tsp chaat masala br ½ tsp red chili powder br 1 tsp roasted cumin powder br black salt as required br br 2 tbsp Tamarind chutney br 2 tbsp Coriander chutney br Pomegranate seeds br Juliennes of raw mango br br Method br - Soak the for 8 hours and then grind them also add some water for consistency. br - Add hing, cumin, salt,chopped ginger and green chillies br -Mix it properly br - Heat oil on moderate flame, add few tablespoons of the heated oil into the batter br -Make lemon size balls of the batter and add them into the oil br -Cook them until they turn golden brown br -Take them off the and put it into a bowl of water br -Whip the plain yogurt br -Place the vadas into the plate top it up with whipped curd, tamarind chutney, coriander chutney, pomegranate seeds,black salt, red chilli powder, cumin powder, juilines of raw mango br - Dahi Vada is ready to be served.
