Make this recipe at home and share your experiences with us in the comments section below. br br Ingredients:- br 250g small brinjals br 1 tsp mustard seeds br 12 tsp asafoetida br 1 tsp garlic, grated br 1 onion, chopped br 3 medium sized potatoes, chopped br 12 a cup of water br br Mixture- br 2 cups of grated coconut br 12 a cup of coriander leaves, chopped br 1 tbsp peanuts, ground coarsely br 14 tsp turmeric powder br 1 tsp coriander & cumin seed powder br 12 tsp red chilli powder br 12 tsp amchur or raw mango powder br 1 tsp sugar br Salt to taste br Oil br br Method:- br Cut the brinjals into half. Heat oil in a pan and add mustard seeds, asafoetida, grated garlic, onion and saute for a minute. Then add the brinjals, potatoes, salt, water and cover the pan with a lid and let it cook on low flame till the brinjals and potatoes are cooked. br br Dry Mixture:- br In a bowl mix grated coconut, coriander leaves, peanuts, turmeric powder, coriander and cumin seed powder, red chilli powder, raw mango powder, sugar and salt. br Add this mixture to the cooked brinjals and potatoes. Stir well and add water as required. br br Cover with the lid and simmer for a minute.
