BAKED CRISPY CARAMEL CORN\r

6 quarts air-popped popcorn (about 1 cup of kernels)\r
1 cup (2 sticks) butter\r
2 cups brown sugar\r
1/2 cup dark or light corn syrup\r
1/2 teaspoon salt\r
1/2 teaspoon baking soda\r
1 teaspoon vanilla\r
1 cup dry roasted nuts, optional\r

1 Add popcorn to a very large roasting pan or two large cookie sheets with sides.\r

2. Melt butter in a large (4-1/2 QT) sauce pan, over medium-high heat. Stir in sugar, salt and syrup. Stirring constantly, with wooden spoon, until mixture begins to boil. Boil without stirring for 5 minutes.\r

3. Remove from heat. Add soda and vanilla. Stir well.\r
\r
4. Immediately, gradually pour caramel mixture over popped corn. With large silicon spatula or spoon.gently stir until popcorn is evenly coated (work with CAUTION.caramel will be HOT).\r

5. Bake in preheated 250 F. oven for 1 hour.Tossing every 15 minutes.\r
\r
6. Remove from oven, cool for 10-15 minutes and break apart.\r
\r
7. Store Caramel Corn in airtight container. \r
\r
May add nuts if desired. \r
