This recipe was handed down from a Great-Aunt in Sri Lanka who makes it for every occasion, to distribute to friends and family. It is light, fluffy and uses simple ingredients. A staple at birthday parties and food platters that are delivered to neighbors and friends at Christmas and New Year festivals.\r

The original recipe calls for 2 cups of sugar. Too sweet for my taste so I have reduced the amount of sugar to 1 3/4 cups.\r

Without adding food color, the marshmallow becomes snow white. \r
\r
Add color to suit your event theme, mood or for fun.\r
\r
Helpful Tips: \r

Marshmallows can be a nightmare to work with if they are not properly set. But this recipe will not fail so go ahead and make it with confidence!\r

Beat well until it is very thick and gooey like in the video.\r
\r
Set at room temp for 3 hours or even longer to be sure that its set.\r
\r
You can chill it in the fridge for about an hour to help it set faster. I also put it in the freezer for 20 minutes to 1/2 hr before cutting and it was very easy to work with.\r

Use corn starch or powdered sugar for dusting. If you want, put half of each in a bowl and mix well before using to dust the marshmallows. \r
