Ingredients:\r

For the filling:\r
200g cabbage\r
1/2tsp salt\r
100g onion\r
10g ginger\r
3 cloves of garlic\r
20g chinese chives\r
10g dried shiitake\r
\r
For the dough:\r
200g all purpose flour\r
110g hot water (adjust the amount of water if needed)\r

For the sauce:\r
2 tbsp soy sauce\r
1 tbsp vinegar\r
1 tsp toasted sesame oil\r
10g green onion\r
1 tbsp toasted sesame seeds\r
1 tsp chili bean paste (optional)\r
1 tsp sweet soybean paste (optional)\r

Instructions:\r
\r
1. sprinkle salt over cabbage and wait until water come out.\r
2. soak dried shiitake for 10 minutes or so.\r
3. mince all the vegetables for the filling and put together.\r
4. make the dough. divide the dough into small pieces.(13g each)\r
5. warp the filling.\r
6. boil the dumplings for 2 - 3 minutes.\r

【材料】約25個分\r

キャベツ　200g\r
塩　小さじ1/2\r
玉ねぎ　100g\r
ニラ　20g\r
生姜　10g\r
にんにく　3つ\r
干し椎茸　10g\r

中力粉　200g\r
お湯　110g（お湯の量は調整してください）\r

醤油　大さじ2\r
酢　大さじ1\r
ごま油　小さじ1\r
炒りごま　大さじ1\r
万能ネギ　10g\r
豆板醤　小さじ1（お好みで）\r
甜麺醤　小さじ1（お好みで）\r

【作り方】\r
\r
１、キャベツに塩をふってしんなりするまで置いておきます。\r
２、干し椎茸を浸水しておきます。\r
３、具の材料を全てみじん切りにして合わせておきます。\r
４、皮を作ります。中力粉とお湯を混ぜ、一つ13gくらいに切り分けます。\r
５、具を包みます。\r
６、水餃子を茹でます。途中、お湯が沸騰したら差し水をしても良いです。（その方が気持ちモッチリします。）茹で時間は２分くらいです。\r
