Rou Jia Mo (肉夹馍) is a very popular snack in Xi'an's Muslim Quarter. You can choose to have either mutton or beef in your sandwich. Choice cuts of stewed meat is first selected from a pot and then finely chopped into small pieces and stuffed into a dry wheat bun. A spoonful of meaty juices from the same aforementioned pot is then drizzled onto the sandwich.
