Its the perfect dish for a large gathering, or a pot luck party\rbrVisit my website: \rbr\rbrMy Free Newsletter: .\rbr\rbrConnect with me on FACEBOOK yet? \rbr\rbrTWITTER: \rbr\rbrPinterest: \rbr\rbrGoogle+: \rbr\rbrInstagram: \rbr\rbrSPANISH RICE: \rbr\rbrGUACAMOLE: \rbr\rbrTACO SEASONING: \rbr\rbrBurrito Pie\rbrFeel free to customize it with your favorite toppings.\rbr\rbrIngredients:\rbr2 lbs. ground beef\rbr1 yellow onion, super fine dice\rbr2 cloves garlic, minced\rbr2 15 oz. cans of refried beans\rbr1 15 oz. can of fire roasted tomatoes, blended in blender\rbr1 4 oz. can of green chiles\rbr34 cup of store bought salsa\rbr3 Tbsp. of Rockin Robins taco seasoning\rbr4 - 5 cups of spanish rice\rbr1 lb. mild cheddar cheese, grated\rbr6 to 8 flour tortillas\rbr\rbrOptional Garnishes:\rbr\rbrsour cream \rbrguacamole \rbrsliced olives \rbrsalsa \rbrchopped jalapeno\rbr\rbrDirections:\rbr\rbrPreheat oven to 350 degrees F.\rbr\rbrMake the spanish rice a head of time.\rbr\rbrIn a large frying pan, brown the ground beef and onion until no longer pink. Break up the ground beef as it cooks. Drain excess grease.\rbr\rbrAdd the garlic, fire roasted tomato, salsa, taco seasoning, and green chiles. Stir until well combined. Add 12 cup of water if the mixture seems dry and you need moisture to dissolve the taco seasoning.\rbr\rbrAdd the refried beans and stir until combined. Simmer for 20 minutes.\rbr\rbrUse an oven proof 9 x 13 dish or larger.\rbr\rbrPlace a thin layer of beanbeef mixture to cover the bottom of dish.\rbrPlace a layer of flour tortillas on top of it. Its fine if they over lap a bit. Cut small pieces of tortilla to fill in any gaps.\rbr\rbrNext place a thin layer of spanish rice over the tortillas, followed by another layer of the beanbeef mixture. The add a layer of cheese on top of the beanbeef mixture.\rbr\rbrNow repeat the layers until you fill the dish. Always end with the beanbeef layer topped with a final layer of cheese. Place a bit more cheese on the final layer so its nice and cheesy.\rbr\rbrPlace in the oven at 350 degrees F., uncovered for 20 to 30 minutes or until everything is pipping hot and the cheese is melted and bubbly.\rbr\rbrServe with your favorite garnishes like sour cream and guacamole!\rbr\rbrEnjoy!\rbr\rbrThanks for watching and sharing!\rbrRockin Robin\rbrP.S.
