The following recipe takes the delicious ingredients that make up the topping and combines them so skillfully with the chicken, mozzarella and potatoes that this beloved appetizer is turned into a fantastic main course.br br You'll Need:br br For the chicken:br br - 1 tbsp olive oilbr - 3 chicken breastsbr - salt & pepperbr br For the potatoes:br br - 16 oz baby potatoesbr - 1 tbsp olive oilbr - 2 two finely chopped garlic clovesbr - ½ tsp thymebr - ½ tsp oreganobr - ½ tsp basilbr - ½ oz parmesanbr - ½ tsp pepperbr - 1 ball of mozzarella cut in slicesbr br For the bruschetta mix:br br - 5¼ oz cherry tomatoes in different colorsbr - 2 finely chopped garlic clovesbr - salt, pepperbr - 1 tbsp balsamic vinegarbr - 2 tbsp olive oilbr br For the garnish:br br - fresh basil leavesbr br Here's How:br br 1. First coat a deep baking tray with the oil, place the chicken breasts on it and season them with salt and pepper to taste.br br 2. Cut the potatoes into roughly even chunks, put them in a bowl and pour on the oil. Next, add all the spices and the cheese and mix everything thoroughly together. Then add everything in with the chicken on the baking tray. After that, cover each chicken breast with a thick slice of mozzarella.br br 3. Now halve all the cherry tomatoes and put them in a bowl. Season with salt, pepper and garlic before pouring in the balsamic vinegar and the oil. Mix everything well and then spread the contents of the bowl around the chicken breasts.br br 4. Put the tray in a convection oven and bake the whole thing for 25 minutes at 390°F. br br Tip: Carefully removed all the ingredients from the tray and arrange them on a serving platter. As a final touch, you can decorate the dish with fresh basil leaves around the edge.
