This show of Food Diaries with Chef Zarnak Sidhwa aired on 6th August 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: br POACHED CHICKEN SALADbr Ingredients:br Chicken thighs 4br Carrot (chopped) 1br Celery (chopped) 1 stalkbr Leek (sliced) 1br Bay leaf 1br Garlic 2-3 clovesbr Ingredients for Dressing:br Yogurt 3 tbspbr Mayonnaise 4 tbspbr Wholegrain mustard 1 tbspbr Dijon mustard 1 tbspbr Lemon juice of 1 lemonbr Honey 1 tspbr Tarragon Pinch ofbr Ingredients for Salad:br Iceberg salad as requiredbr Apple (sliced) 1br Green beans fewbr Tomato wedges 1br Onions fewbr Method:br For the poached chicken, put chicken thighs in water with bay leaf, carrot, celery, leek and garlic cloves. Simmer until chicken is done. Strain the stock and cool the chicken. Tear into large chunks. For the dressing, whisk all the ingredients well until smooth and drizzle a little water if dressing is too thick. Lay the salad leaves with the sliced apple, blanched green beans, tomato and onions on a platter. Put the poached cooled chicken over it and drizzle the dressing. Serve immediately with bread.br br BLACKOUT CHOCOLATE CAKEbr Ingredients:br Flour 3 cupsbr Sugar 3 cups br Cocoa powder 1-½ cupsbr Coffee powder 1 tbspbr Baking soda 1 tbspbr Baking powder 1-½ tspbr Salt 1-½ tspbr Eggs 4br Yogurt 1-½ cups br Water 2 cupsbr Oil ½ cupbr Vanilla essence 1 tbspbr Ingredients for Frosting:br Butter 1-½ cups br Cream cheese 8 oz br Cocoa powder 1-½ cupsbr Vanilla essence 1 tbspbr Salt a pinchbr Icing sugar 7 cups br Cream ¼ cup br Chocolate chips 3 cups br Melted chocolate to drizzlebr br Method:br For the cake, mix the dry ingredients together. Add in the wet ingredients and mix until just combined. Divide evenly between the three greased and lined 9” cake pans. Bake at 180 degrees C for 35 minutes or until the cakes are done. Let the cakes cool. For the frosting, beat all the ingredients, except chocolate chips, until smooth. Stack the cakes up, frosting between each layer, around the outside, and on top. Chill. Press the chocolate chips on the sides of the cake. Melt a little chocolate and drizzle on top.
