This show of Mehboob's Kitchen with Chef Mehboob Khan aired on 12th August 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: br Kofta Karahi:br Ingredients:br Meatballs 1 packet br For making karahi:br Garlic paste 2 - 3 tbspbr Tomato 4 - 5 br Green chilies chopped 5 - 6br Whole green chilies 5 - 6 br Crushed red chili 1 tspbr Crushed black pepper 1 tspbr Crushed aniseed 1 tspbr Crushed cumin 1 tspbr Fenugreek ½ tspbr Butter 2 - 3 tbspbr Clarified butter ½ cupbr Salt to tastebr Green coriander for garnishing br br Method:br In a pan add meatballs then fry and set aside .Heat oil in pan and fry it. Then add tomato, chopped green chilies, crushed red chili, crushed black pepper, crushed fennel, crushed cumin and salt to mix and sauté. Then add butter, whole green chilies and fenugreek to mix. Then add meatballs with as required water to simmer. When oil separates dish it out garnish with green coriander and serve. br br Bara kabab:br Ingredients:br Mutton chops 1 kg br Flour ½ cup br Tenderizer powder (kachri) 1 tbsp br Salt 1-12 tsp br Garlic 2 tbsp br Ginger 2 tbsp br Oil for frying br Green chili slice 4-6 br Crushed green coriander 6 tbsp br Wheat flour ¼ cup br Egg 2 br Garam masala powder 1 tbsp br Cumin 1 tbsp br Coriander 2 tbsp br Red chili powder 1 tbsp br Turmeric 1 tsp br Method:br • In a bowl add all ingredients except oil and mix well.br • Now add Mutton chops and leave to marinate for 6 hours.br • Then heat oil and cook 20 minutes on medium flame and serve .br br Bihari Boti br Ingredients:br Mutton cubes ½ kg br Raw Papaya 2 tbspbr Yogurt 1 -12 cupbr Screwpine Water 1 tspbr Brown onion(fried & grinded)4 tbspbr Bihari Masala (prepared) 2 – 3 tbspbr Ginger Garlic 1 tbspbr Sambal Oleak 2 tbspbr Sweet Chili Sauce 2 tbspbr Egg (boiled) for servingbr Method:br In a bowl , mix yogurt raw papaya, salt, ginger garlic, brown onion, bihari masala sambal oleak , sauces,mix all well leave to marinate for 4 hours, heat oil add mutton boti fry on both the side till golden add two cup water in this marinate to cover and cook on low flame till done. Lastly add screwpine water and remove serve garnish with boiled eggs.
