This show of Food Diaries with Chef Zarnak Sidhwa aired on 3 September 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: br Chicken Roti Wraps:br Ingredients for marinade:br Oil 2 tbspbr Ground Cumin 2 tspbr Ground Coriander 1 tspbr Paprika 2 tspbr Chili Flakes a pinch br Turmeric ½ tspbr All spice powder 1 tspbr Lemon juice of ½ lemonbr Other Ingredients:br Chicken breasts (cubed) 2br Roti 4br Onion (sliced) 1br Coriander (chopped) 2 tbspbr Yoghurt 4 tbspbr Mango Chutney 4 tbspbr Salt to tastebr Black pepper as requiredbr Method:br Marinate the chicken cubes in the marination ingredients and set aside overnight. When ready to cook, remove the chicken from the marinade and season with salt and pepper, cook it till done in very little oil. Top each warm roti with yoghurt, mango chutney and chicken add the onion and coriander. Wrap up in a greaseproof paper. br br HAND PIES:br Ingredients:br br Chicken breast (chopped) 1 br Oil 1 tbspbr Onion (chopped) 1br Garlic (minced) 1 clovebr Salt to tastebr Black pepper as requiredbr Thick white sauce 1 cupbr Cream cheese 2 tbspbr Shredded cheddar cheese 1-12 cups br Puff pastry 1 kgbr Egg 1 br Cream 1 tbspbr Flour for rolling out doughbr br Method:br Heat oil. Add onion and garlic and sauté, add in chicken breast and season with salt and pepper. Cook till done and remove pan from heat and stir in thick white sauce, cream cheese and 1 cup cheddar until fully incorporated. Set aside while you roll out the puff pastry. On a lightly floured work surface, roll out puff pastry dough until it’s about 18" thick. Cut into large rounds or use a mold to shape into small sized pies. Spoon a heaping tablespoon of chicken mixture onto one half of each circle. Fold it in half so the other side covers the filling to create a semicircle. Press down around the edges to seal, and then press the edges of the dough together with the back of a fork. Repeat process with remaining dough. Place hand pies on baking sheets. Brush each pie with egg and cream and sprinkle with remaining 12 cup cheddar cheese. Bake until puffed and golden brown, about 25 minutes. Cool for at least 10 minutes on baking sheet. Serve warm or at room temperature.br br br Banana cream:br Ingredients: br Bananas 2br Caramel sauce 3 tbspbr Biscuit crumbs ½ cupbr Cream 1 cupbr Method: br Mix the sliced bananas with cream and caramel sauce and sprinkle biscuit crumbs and serve.
