This show of Evening With Shireen with Chef Shireen Anwar aired on 4 September 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this YouTube channel or go to our Website: br Aalu Chutney Pulaobr Ingredients for Chutney:br br Coriander leaves 1 bunchbr Mint leaves 1 bunchbr Chopped tomato 1 mediumbr Fennel seeds 1 tspbr Cumin seeds 1 tspbr Dried pomegranate seeds ½ tbspbr Dried mango powder 1 tspbr Lemon juice 2 tbspbr Chopped green chilies 8br Salt to tastebr Ginger garlic 1 tbspbr Yogurt 4 tbspbr br Other Ingredients:br Potatoes (boiled& peeled) 500 gm smallbr Oil ½ cupbr Rice 500 gmbr Cinnamon 1 piecebr Bay leaf 1br Green cardamom 3 podsbr Cloves 3br Salt 1-12 tsp br Sliced fried onions 3br Chopped mint leaves 2 tbspbr Chopped coriander leaves 2 tbspbr Saffron water 1 tbspbr Lemon slices of 1lemonbr Green chilies 4br br Method:br Blend all ingredients of chutney. Fry potatoes in oil. Heat oil add whole all spices, chutney and cook. Then add potatoes and half fried onions. Now add water for rice with salt and cook rice. Add green chilies, lemon, fried onion, saffron water and let it simmer. Add coriander and mint leaves and serve.br br Mutton Potato Kofta Curry:br br Ingredients for kofta:br Potatoes (boiled & mashed) 500 gmbr Semolina 2 tbspbr Flour 2 tbspbr Salt to tastebr All spice powder 1tspbr Black pepper powder 1tspbr Chopped green chilies 3-4br Egg 1br Mint leaves 1tbspbr Oil for frybr br For gravy:br Mutton 750gmbr Brown onions 4br Ginger garlic 1tbspbr Tomatoes 250gmbr Salt to tastebr Red chilies 1 tbspbr Turmeric 1 tspbr Coriander powder 1-12 tbspbr Crushed cumin 1 tbspbr Yogurt ½ cupbr All spice powder 1tbspbr Fresh coriander to garnishbr br Method:br Mix all ingredients of kofta and make balls. Then fry them in oil. Now heat oil for gravy add mutton, ginger garlic and cook well to tender meat. Then blend tomatoes, yogurt and brown onion. Add this blended mixture, salt and powdered spices to mutton and cook. When meat gets tender then add 1 cup water, koftay and let it simmer. Now add all spice powder, fresh coriander and serve.
