This show of Mehboob's Kitchen with Chef Mehboob Khan aired on 9 September 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: br QEEMA GHOTALA:br Ingredients:br Parathay 6br ChickenBeef Mince ½ kgbr Yogurt ½ kgbr Raw papaya paste 2 tbspbr Yogurt Cream 2 tbspbr Salt to tastebr Red chili Powder 1 tbspbr Ginger Garlic paste 1 tbspbr Tandoori masala 2 tbspbr Chopped Green chilies 2br Lemons 4br Chopped Green Coriander 1 bunchbr Oil ½ cupbr Method:br In a big bowl, add in ½ kg mince, 2 tbsp raw papaya paste, 250 gm yogurt, 2 tbsp yogurt cream, some salt, 1 tbsp red chili powder, 1 tbsp ginger garlic paste, 2 tbsp Tandoori masala, 2 chopped green chilies, 4 lemon juice and ½ cup oil. Mix everything well. Add in some oil in the pan and cook it. When the water dries, cook it add in some chopped coriander and serve with paratha.br br Pulao Biryani :br Ingredients:br Chicken (14 pieces) 1br Black peppercorn 4br Garlic cloves 1br Ginger 1 small piecebr Fennel seeds 1 tspbr Coriander seeds 1 tbspbr Salt to tastebr For Biryani:br Rice 2 cupsbr Yogurt 1 cupbr Fresh milk 1 cupbr Clarified butter oil 1 cupbr Chopped mint leaves 1 bunchbr Biryani Masala 1 packetbr Chopped onion 3br Lemons 4br Chopped green chilies 8br yellow food color as requiredbr Ginger Garlic paste 1 tbspbr Salt to tastebr Method:br Take 3 glasses of water in the pan, add in chicken, coriander seeds, fennel seeds, ginger, garlic, black peppercorns and some salt. Boil it. When the chicken tenders, separate both the chicken and stock. In a separate pan, add in rice with the prepared stock and boil it. Drain the water once boiled. Now in a separate pan, add in 1 cup clarified butter, chopped onion and fry it till they are golden brown. Take out half of it and separate it. Now add in, 1 tbsp ginger garlic paste, 1 packet biryani masala, 1 cup yogurt, lemon juice and chopped mint leaves. Layer the remaining rice.br br Khatti Meethi Chutney :br br Ingredients br br Tamarind 125gmbr Dates 125gmbr Red chili crushed 1tspbr Cumin 1tspbr Black salt ¼ tspbr Ginger powder ½ tspbr Salt as requiredbr Oil as requiredbr br Methodbr Soak dates and tamarind in separate bowl for 30 min till pulp separate , now heat oil in a pan stir cumin and red chili crushed , now add tamarind and date pulp in grinder add all ingredients and grind together and serve.
