Mix wheat flour and semolina and add the mashed bananas, cardamom and nutmeg powders, vanilla essence, raisins, set aside for few hours and then heat clarified butter, add in tablespoonfuls of the fritter batter and deep fry till golden. Let excess clarified butter drain and then serve hot for tea.br br Omelette Curry: br Ingredients for Omelette:br Eggs 4br Spring onions (chopped) 2br Green chilies (chopped) 6br Coriander leaves ¼ cupbr Red chili powder 1 tspbr Ginger garlic paste 1 tspbr Turmeric ½ tspbr All spice powder ½ tspbr Salt to tastebr For Curry:br Onions (sliced) 2br Tomatoes (chopped) 2br Curry leaves 2 br Lemon juice of 2 lemonsbr Salt to tastebr Oil as requiredbr To Grind:br Coconut 1 cupbr Whole red chilies 12br Cashew nuts ¼ cupbr Coriander seeds 1 tbspbr Cumin seeds 1 tspbr Fennel seeds 1 tspbr Poppy seeds 1 tspbr Sesame seeds 1 tspbr Dry mango powder 1 tspbr Turmeric ¼ tspbr Ginger 1inch piecebr Method:br Heat oil, add onions and sauté till golden add curry leaves and tomatoes and cook till soft. Add ground masala and water and cook, add salt, simmer and set aside. In a bowl mix ingredients for omlette. Heat oil, add a ladleful of omlette mixture and cook on both sides till done. Repeat till all mixture is used up and a few omlettes are made. Set aside. When cold cut in cubes or strips. Gently add omlette pieces in the hot curry just before serving. Add lemon juice and serve with boiled rice.
