This show of Mehboob's Kitchen with Chef Mehboob Khan aired on 14 October 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: br Bhagaray Dahi Baray:br Ingredients:br Gram flour 1 cupbr Chili powder 1 tspbr Chili powder 1 tspbr Cumin seeds 1 tbspbr Carom seeds 1 tspbr Baking soda 13 tspbr Oil for fryingbr Yellow lentil (soaked& grinded) 2 cupsbr Yogurt ½ kgbr Chaat masala 1-12 tbspbr Black salt 1 tspbr Chopped onion 1 largebr Chopped coriander 3 tbspbr Tamarind pulp 1 cupbr For baghaar:br Whole red chilies 6-8br Cumin seeds 1 tbspbr Mustard seeds 1 tbspbr Oil ¼ cupbr Curry leaves 12-15 leavesbr Chopped garlic 2 tbspbr Method:br In a bowl add gram flour, chili powder, cumin seeds, baking soda, yellow lentil, salt, carom seeds, 1-12 cup of water and mix well. Now heat oil in a pan and deep fry baray for 6 to 8 minutes. Remove and to a bowl of water and let it soak for 5 minutes. Then remove, squeeze and set aside. Now place baray in a dish and spoon yogurt on top. Then add tamarind pulp, chaat masala, onion, coriander and black salt and set aside. For baghaar heat ¼ cup of oil add whole red chilies, garlic and curry leaves and fry for ½ minute. Then add cumin seeds and pour over the baray and serve.br br Bhelpuri:br Puff rice 4 cupbr Sev 2 cupbr Boiled potato 2 br Chopped tomato 2br Chopped onion 1br Chopped carrot 1br Chopped cucumber ½ cupbr Turmeric powder 1 tspbr Red chili powder as requiredbr Salt to tastebr For green chutney:br Green coriander 1 cupbr Green chilies ½ bunchbr Deseeded dates ½ cupbr Brown sugar 1 tbspbr Red chili powder 2 tspbr White cumin 2 tbspbr Salt to tastebr Method:br Method:br To prepare Bhel Puri:br Take ½ cup carrot, 1 chopped onion, 4 cup puff rice, 2 cup sev, ½ cup cucumber, 2 cup chopped tomatoes, boiled potato cubes in a mixing bowl. Add in red chili powder, 1 tsp turmeric powder and salt. Mix everything together. br To prepare sweet and sour chutney:br Take 1 cup tamarind paste, ½ cup dates, 2 tbsp cumin seeds, 2 tsp red chili powder,1 tbsp brown sugar and salt in a blender and blend it. chutney is readybr For green chutney:br Blend 6 green chilies, ½ bunch green coriander, lemon juice and salt in a blender. Green chutney is ready. br For serving:br Take a big dish and dish out the bhel poori in it put different types of chutneys on it and serve.
