This show of Food Diaries with Chef Zarnak Sidhwa aired on 23 October 2019. br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: br Thandai Ice cream:br Ingredients:br Milk 250 mlbr Cream 500 mlbr Caster sugar ½ cupbr Egg yolks 4br Cardamom seeds 3br Black peppercorns 1 tspbr Coriander seeds 1 tspbr Melon seeds 1 tspbr Almonds (blanched) ½ cupbr Ginger powder 1 tspbr Cashews 1 tbspbr Nutmeg powder ¼ tspbr Pistachios 1 tspbr Saffron ½ tspbr Rose water as requiredbr Aniseed 1 tspbr Rose petals for garnishbr Method:br Whisk egg yolks along with sugar on a double boiler.br Prepare thandai masala: Grind almonds, cashews, pistachios, melon seeds, coriander seeds, black peppercorn, aniseed, cardamom seeds, ginger powder, nutmeg powder along with saffron and rose water. To prepare the ice cream, boil milk in a pan and add cream into it. Add the prepared egg yolk mix to the pan and stir well. Turn off the flame and add a tablespoon more of cream. Mix and freeze overnight. Garnish with rose petals before serving.br br Lemonade Ice cream:br Ingredients:br Milk 3 cupsbr Egg yolks 6 br Caster sugar 23 cup br Lemon essence 1 tspbr Lemon zest of 3 lemonsbr Lemon juice 2 tbspbr Frozen lemonade concentrate 13 cup br Method:br Heat the milk to a boil. Remove from heat. Beat the egg yolks and sugar together until light. Slow pour the hot milk into the egg mixture, whisking constantly. Turn the mixture into the sauce pan and cook over low heat, stirring with a wooden spoon until it thickens slightly and coats the back of the spoon. Do not allow it to come to a boil or it will curdle. Add in lemon essence, zest and juice. Allow the mixture to cool to room temperature and then refrigerate it, loosely covered with plastic wrap until chilled. Then freeze. Once it starts to set and thicken, add in the lemonade concentrate and continue mixing until set up.br br Apple Pie Ice cream:br Ingredients for Apple compote:br Brown sugar ¼ cup br Unsalted butter 1 tbspbr Cinnamon 1 tspbr Apples (peeled & cubed) 2 br For Ice cream Base:br Condensed milk 14 oz canbr Cinnamon ½ tspbr Vanilla essence ½ tspbr Cold cream 2 cups br Crushed cookies ¾ cup br Method:br Place brown sugar and butter in a saucepan. Stir until the butter is melted and add the apples and cinnamon powder. Simmer, covered for few minutes, until the apples are tender. Transfer to a bowl and refrigerate until chilled. Mix condensed milk, cinnamon powder and vanilla essence. Puree half the apple compote (it won't be completely smooth) and stir the pureed compote into the condensed milk mixture. Set aside.br Whip the heavy cream until stiff peaks form.
