Here are great egg concoctions for those memorable and filling dinners. br br Spiced Lentils with Egg br This primarily vegetarian requires stewed lentils and split peas. You’d also need two teaspoons of garam masala, minced garlic cloves, and shallots, and four cups of low-sodium chicken broth to complement the lentils and four large eggs. Heat the oven to 350°F then use ovenproof baking dishes for the lentils. Make a deep hollow in the center of each and crack in the individual eggs, then sprinkle salt and pepper. Bake for 18 to 25 minutes and serve immediately. br br Pesto Zoodle Bowl br For this easy-to-prepare meal, you’d need basil pesto, a large egg, salt and black pepper, and a medium zucchini. Pick up that container of zucchini noodles and a jar of your favorite pesto, and in about five minutes you've got a simple but sumptuous dinner. Cook the noodles first, then make the eggs with seasonings of salt and pepper. You’d want to cook until the yolk is set but still runny. Place the eggs on top of the noodles and sprinkle with a dash of red pepper flakes or hot sauce for that extra spice. br br Kimchi Fried Rice with Extra Greens br For that distinct Korean flavor, you’d need chopped Napa cabbage kimchi and a teaspoon of gochujang mixed in with white or brown rice and sprinkled with scallions and thinly sliced greens such Swiss chard or spinach. Stir-fry the rice until heated, add the greens, scallions and a teaspoon of tamari or soy sauce. Push the rice to one side and pour in two large, lightly beaten eggs. Stir the eggs into soft curds then mix into the rice. Serve drizzled with sesame oil.
