This show of Food Diaries with Chef Zarnak Sidhwa aired on 11 November 2019.br br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our website: br Surf And Turf:br Ingredients:br Steak fillets 2br Prawns ½ kgbr Asparagus 3-4br Cauliflower 1 smallbr Zucchini 1br Rosemary 1 tspbr Lemon 1br Olive oil as requiredbr Salted butter ½ cupbr Garlic 4-6 clovesbr Garlic powder 1 tspbr Black pepper 1 tspbr Salt to tastebr Sugar as requiredbr Salt 1 tspbr Onion powder 1 tspbr Paprika 1 tbspbr Brown sugar 2 tbspbr Method:br Mix salt, onion powder, paprika and brown sugar. Now marinate steak fillets in lots of olive oil, the mix and garlic. Heat butter until almost melted, add ground pepper, garlic. Add steaks and sear on each side for 2-3 minutes. Remove and set aside. Now add prawns to same pan and cook on high heat. Remove and set aside. br In a separate pan heat butter or olive oil. Add rosemary, cauliflower. Season with salt, garlic, ground pepper and sugar. Cook uncovered until cauliflower florets appear caramelized. Remove and set aside. Put Asparagus and Zucchini in a sauté pan and drizzle with Olive Oil, Garlic powder and ground pepper. Roast for 5 minutes.br Place steak Filets in a pan. Place vegetables around. Drizzle with any remaining butterolive oil. Bake at 200 degrees C for 25-30 minutes. Serve steaks with prawns and cauliflower and the roasted vegetables. Garnish with Lemon slices and sprinkle more rosemary.br br Chocolate Mocha Cookies:br INGREDIENTSbr Cocoa powder ¼ cup br Baking soda ½ tsp br Cream of tartar 1 tsp br Salt ¼ tsp br Flour 1-13 cups br Flour 2 tbspbr Unsalted butter 12 cup br Caster sugar 34 + 13 cupbr Egg 1 br Vanilla essence 1 tspbr Coffee powder 1-12 tsp br Cinnamon powder 2 tsp br br Method:br Mix cocoa, baking soda, cream of tartar, salt and flour. Set aside. Beat butter and 34 cup caster sugar. Mix in egg, vanilla essence and coffee powder. Add the dry ingredients to the wet and mix until combined. Scoop dough onto silpat lined cookie sheets. Chill for 30 minutes. Mix remaining 13 cup caster sugar and cinnamon powder in a small bowl. Roll each cookie dough ball completely in the cinnamon sugar. Place back on baking sheets, 2” apart. Bake for 9-11 minutes.
