This show of Food Diaries with Chef Zarnak Sidhwa aired on 18 November 2019.br br br If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our website: br br Fish Burger:br Ingredients:br Fish fillets ??????br Flour 1 cup br Baking powder 1 tspbr Corn flour 1 tbspbr Extra corn flour to dustbr Turmeric powder 1 tspbr White wine vinegar 1 tbspbr Ice cold water white drink 300mlbr Oil for deep fryingbr Burger buns 4br Butter 1 tbspbr br Ingredients for Tartar Sauce:br Mayonnaise 1 cup br Mustard 1 tspbr Chopped parsley 2 tbspbr Chopped gherkins 2 tbspbr Chopped spring onion 1 br Chopped capers 1 tbspbr Peas 1 cupbr Mint 2 tbsp br Butter 1tbsp br Method:br Mix together all the tartar sauce ingredients and season with salt. Chill. Boil the peas in salted water for 1 minute, drain, and then tip into a food processor. Add the butter, mint and seasoning, and pulse until mushy. Mix the flour, baking powder and corn flour, add in turmeric with the white wine vinegar and cold water and to make a batter and season well. Heat oil. Dust the fish pieces lightly with some extra corn flour, and then dip into the batter. Lower into the oil and fry until crisp and golden. Drain on kitchen paper. To assemble, dollop some mushy peas on the base of each toasted and buttered burger bun, top with the fish then some tartar sauce, top with the top bun and serve immediately.br br Moist chocolate cupcakes:br Ingredients:br Flour ¾ cup br Cocoa powder ½ cup br Baking powder ¾ tsp br Baking soda ½ tsp br Salt ¼ tspbr Eggs 2 br Caster sugar ½ cup br Brown sugar ½ cup br Oil 13 cup br Vanilla essence 2 tsp br Buttermilk ½ cupbr Sprinkles to decoratebr Method:br Whisk the flour, cocoa powder, baking powder, baking soda, and salt in a bowl; beat the eggs, caster sugar, brown sugar, oil, and vanilla together until completely smooth. Pour half of the wet ingredients into the dry ingredients. Then half of the buttermilk. Gently whisk for a few seconds. Repeat with the remaining wet ingredients and buttermilk. Do not over mix. The batter will be thin. Pour the batter into the liners. Fill only halfway to avoid spilling over the sides or sinking. Bake at 180 degrees C for 18-21 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting. Frost cooled cupcakes with the chocolate butter cream. Top with sprinkles.br br Chocolate Butter cream :br Ingredients:br Unsalted butter 1 cup br Icing sugar 3-½ cupsbr Cocoa powder ½ cup br Cream or milk 3 tbspbr Salt ¼ tspbr Vanilla essence 2 tspbr br Method:br Beat the butter until creamy.
