Quinoa Vegetable Hotchpotch Khichdi is a hearty meal. br INGREDIENTS: br 12 cup Quinoa br 12 cup Split Mong (Green moong Dal) br 14 cup Peas & carrots br 14 cup Diced potato br 18 cup Chopped onions br 1 teaspoon Ginger garlic paste (optional) br 12 teaspoon Turmeric powder br 1 teaspoon Chili Powder br 12 teaspoon Cumin seeds br 1 tablespoon oil br Salt to taste br 1 Cinnamon stick, Bay leaf, 3- Cloves , 4 Pepper Corn br br PREPARATION: br 1. Wash Dal. In a pot, heat oil & add Cumin seeds, Bay leaf, br Cinnamon stick, Cloves & Black pepper corn. br 2. As soon as Cumin seeds start spluttering, add onions, ginger garlic br paste (optional), potatoes & stir. br 3. Then add Peas & carrots, turmeric, chilly powder, salt & water. br 4. As soon as it starts boiling, add dal & rice & Boil for about 10-15 br minutes or when dal, rice & vegetables are cooked.
