Golgappa is a very common sour n spicy street snack. It consists of a round hollow fried crispy puri, filled with Special Tamarind Sauce & few Vegetables. This recipe includes three steps.br 1. Preparation of golgapa doughbr 2. Vegetables for golgappa fillingbr 3. Preparing Special Tamarind cold sauce.br br Ingredients:br For GolGapa Dough:br - Semolina 2 cups br - Plain flour 3 tbsp br - Salt 12 Tsp br - Lukewarm water 1 cup 250 ml br For GolGapa Filling Ingredients:br - Boiled potatoes 2 br - Green chili 1 br - Fresh mint leaves 12 cupbr - Tomato 1 br - Chat Masala 1 tsp br Special Tamarind Sauce(Khati chutney): br - Tamarind pulp 1 cup br - Fresh coriander leaves 12 cup br - Fresh mint leaves 1cup br - Green chilies 2br - Salt 1 tbsp br - Crushed red chill 1 tbspbr - Cumin seeds 1 tbsp br - Lemon 1 br - Water 1 glassbr br Recipe:-br For GolGapa Dough:br - Knead Semolina, plain flour, salt in lukewarm water till firm dough is formed, set aside covered with transparent foil & let it rest for 10 mins. br For GolGapa Filling:br - Mix potatoes, tomatoes, coriander leaves, chili & chaat masala in another bowl.br For Tamarind Sauce(Khati chutney): br - Put tamarind pulp, coriander leaves, mint leaves 1cup, green chilies, salt, red chill, cumin seeds, lemon with 1 glass of water in a grinder and mix. Your Chutney is ready.br For Golgapa:br - Roll the Dough of Gol gappa and cut circles with any spherical utensil.br - Fry these Puri circle dough in a wok (Remember: Oil should be hot), Pour oil over puri with a spoon to make it puff like a ball.br - Take Puri out of oil and place on absorbent paper to dry extra oil.br - To serve, fill Gol gappas with vegetable mixture & chutney.
