'Break the taboo': Colombian chefs use coca flour in their recipes

Several of Colombia's most renowned chefs are innovating with the coca leaf -ancestral for indigenous communities and an energiser for their long working days- in an attempt to remove the "stigma" of drug trafficking and to show growers a way out of illegality. However, overcoming its bitter taste means a lot of trial and error.
