INGREDIENTS br • 2 small cups thick poha - red or white beaten rice or flattened ricebr • 2 small onion - finely chopped (kanda or pyaaz)br • 2 small potatoesbr • ¼ teaspoon turmeric powder (haldi)br • 1 teaspoon mustard seeds (rai)br • 1 teaspoon cumin seeds (jeera)br • Small bowl of peanutsbr • 10 to 12 curry leaves (kadi patta)br • 2 green chilli (hari mirch), choppedbr • 1 teaspoon sugar or as requiredbr • 1 or 1.5 tablespoon oilbr • salt as requiredbr • Fresh bunch of coriander leavesbr br Preparation-br 1. rinse the poha in water 2-3 times and add sugar, salt and turmeric powder to the poha, gently mix & keep it aside.br 2. Fry peanuts in oil ,till they become crunchy & keep it asidebr 3. Chop potatoes in small pieces & fry it in oil & keep it asidebr 4. Heat oil in the same pan.br 5. crackle the mustard seeds first then cumin seeds, curry leaves, green chilles & chopped onionsbr Now add the poha, peanuts & fried potatoes and stir (mix)well. Then cover and steam the poha for 2-3 minutes on a low flame for 5 minutesbr After 5 minutes switch off the flame, remove the lid and garnish it with chopped coriander leaves and serve it hot.br br Your delicious kanda poha is ready to eat.
