DAY 40 of my salad series is a fried halloumi salad with orzo and marinated radishes and cucumbers πŸ§€πŸ₯’br br recipe (makes 1 serving)br 1. to a large mixing bowl add 14 cup white wine vinegar, 2 tbsp olive oil, 12 tsp cumin, 12 tsp za’atar, 14 tsp red pepper flakes, 14 tsp black pepper, 14 tsp sea salt, and juice of 12 lemonbr 2. mix ingredients together using a whisk and then add 14 cup thinly sliced cucumbers and 14 cup thinly sliced radishesbr 3. toss to coat, then set aside for 10-15 mins to marinadebr 4. cook 12 cup orzo according to package instructionsbr 5. add 2-3 halloumi slices 18” thick to a pan with 1 tsp olive oil over medium high heatbr 6. cook on each side for 2-3 mins until golden brown and set aside to coolbr 7. plate orzo, then add marinated radishes and cucumbers, halloumi slices and 1 tbsp pistachiosbr 8.
