In this video, Mark Messina PhD, MS, Adjunct Associate Professor in the Department of Nutrition, School of Public Health, at Loma Linda University, discusses misconceptions about the roll of soyfoods in Asian diets. No reason exists for such uncertainty however, because there is a wealth of clinical research showing soyfoods are nutritious and can make important contributions to an overall healthy diet. In the United States, although soyfoods are becoming more popular, soy protein intake is only about 2 grams per day on average. Nevertheless, in the United States, soy protein is used by the food industry for its functional properties, such as to improve shelf stability and increase moisture retention. However, the amount of soy protein added to foods is small, so most Americans consume very little soy.
