Roasted Corn Soup - A Recipe By Annuradha Toshniwal (Vegetarian)

Roasted Corn Soup br (Serves 4) br Ingredients -- br 6 corn cobs -roasted & kernels removed br 2 dry red chilliesbr 1 onion sliced br 4 gloves of garlic br 2 black peppercorns br 1 bay leaf br 5 jalapeno peppers -- sliced or 10 slices of bottled jalapenos br 2 cups of water br 1 tbsp olive oil br salt to taste br br Garnish -- Popcorn and Jalapeno slices br br Method- br In a pressure cooker, heat olive oil. Add bay leaf, peppercorns and red chilly. Stir. Add onions and garlic. Saute till brown. Add corn kernels, water and jalapenos. Cook for 2 whistles. Cool. Liquidize. Before serving, heat and garnish. Serve hot.
