How to Make The Best Chinese Chicken Vermicelli ~ Chinese Stir Fry Recipe\r

INGREDIENTS\r
1 package of vermicelli noodles - I used a handful for a serving\r
2 eggs\r
onions\r
carrots\r
mushrooms\r
green garden onions\r
bell peppers\r
4-5 cloves minced garlic\r
1/4 tsp. minced ginger\r
1-2 tbsp. soy sauce\r
1 tbsp. oyster sauce\r
oil\r
\r
Chicken prep:\r
1 pound of chicken breast cut into small slices\r
1 tbsp. soy sauce\r
2 tsp. rice vinegar or Shao Hsing rice wine\r
1 medium egg white\r
\r
PREP:\r
In a bowl add sliced chicken, soy sauce, vinegar and egg white.\r
Mix until combined, cover and set to the side while you prep\r
the vegetables and preheat the wok/pan.\r
\r
In a bowl pour very hot water over vermicelli noodles and let\r
soak for 15-20 minutes, drain and then rinse with cold water.\r
\r
Julienne all vegetables\r
\r
In a pan on medium heat add some oil and beaten eggs.\r
Stir, chop and cook for 2-3 minutes until cooked and in small\r
pieces. Remove from the pan.\r
\r
In a pan on high heat add some oil and chicken.\r
Spread out and let cook for 20-30 seconds before stirring.\r
Stir and cook for 3-5 minutes until done. Remove from the pan.\r
\r
In a pan on high heat add vegetables and stir for 1-2 minutes.\r
Add garlic and ginger. Stir and cook for 30 more seconds.\r
Add back in the vermicelli, eggs, chicken, green onions,\r
soy sauce and oyster sauce.\r
Stir and cook for 2-3 minutes until well combined and \r
vermicelli is aldente. \r
Enjoy.\r
