Oats:\r
3/4 - 1 cup quick oats\r
1 tbsp chia seeds\r
1 tbsp coconut sugar\r
2 handfuls fresh blueberries\r

Stir Fry:\r
Enough fresh veggies for the week, chopped (5-6 cups)\r
chopped onion & fresh ginger\r
2 tbsp sesame seeds\r
1/4 cup soy sauce\r
1 tsp sesame oil\r
\r
+ Soba noodles\r
\r
Stew:\r
2 cups chopped onion/celery\r
1 medium butternut squash, peeled and chopped\r
2-3 cups chopped mixed veggies (such as mushrooms, zucchini, eggplant)\r
3 cups veggie stock\r
1/2 cup red lentils\r
1 can chickpeas (15 oz.)\r
1 can tomato sauce (15 oz.)\r
fresh thyme\r
1 tsp cumin\r
1/2 tsp garlic powder\r
1/2 tsp black pepper\r
salt to taste\r
